Why do many Chinese and Korean immigrants to US get English names while the other ethnicities tend not to?

I can't say about others. For me, it is mainly for the benefit of English speaking people. They have quite difficult time pronouncing it correctly so I have to westernize the pronunciation. So there is no point of keeping it. I do use my given name with family and friends.
